This phenomenon occurs because, as mentioned earlier, viral uncoating—a crucial step for viral replication—relies heavily on proteolytic enzymes.

As you may know, killing these viruses typically requires drugs that also affect host cells, meaning they can have adverse effects on human cells.  However, the toxicity of MGO in Manuka honey is highly selective, affecting only viruses while leaving host cells unharmed.
