I’ve been purchasing monthly on a subscription basis since April. Originally, I started taking it as a preventive measure against infections,
but I’m pleased to see the positive effects, such as quick healing of mouth ulcers. However, the Manuka honey I purchased this third
time was darker in color, much less viscous (flowing easily off the spoon), and had a caramel-like bitterness and unfamiliar tartness.
I understand that, being a natural product, there will be some variation, but I’m very curious about the possible factors—perhaps the season,
changes in the hive, or other reasons? If you have any insights, I would appreciate it.

Thank you for your valuable feedback. The viscosity, hardness, and color of pure raw honey are always affected by surrounding temperatures.
When the honey is softer, storing it briefly in the fridge can increase viscosity and brighten the color. The bitterness and tartness are caused
by the pollen from Kanuka trees, which are similar to Manuka trees. Usually, Kanuka blooms about 40 days later than Manuka, but
depending on the sun exposure and the area of the hives, it may bloom earlier some years. Bees naturally concentrate on one type of flower,
but these occurrences have become more frequent, likely due to recent extreme weather. The bitterness in Kanuka pollen primarily
comes from polyphenols, which, as you may know, are recently gaining attention for their skin-rejuvenating properties. Natural raw honey
contains many such complex components, all rich in beneficial compounds essential for maintaining health. We hope you continue to use our honey with confidence.
